The vintage conditions in 2025 were warm and dry allowing for perfect ripening conditions of our Chardonnay in the Adelaide Hills. Fruit was harvested, crushed, and pressed in the cool early morning of February 20th. After pressing and settling, the juice was fermented with a selection of French oak and completed partial malolactic fermentation with lees stirring. The wine displays a bouquet of apple, grapefruit, and peach complemented with toasted oak. The palate is well balanced with fruit acidity and oak influence combining for a creamy texture and length.
